Lance has spent nearly a decade working in the coffee industry, mastering various roles from barista to roaster, trainer, consultant, and competitor. With two 1st place finishes in the Coffee Fest World Latte Art Championship Open, as well as 2nd and 3rd place wins in the US Brewer's Cup Championships (2019 and 2020), Lance has proven himself as a formidable competitor on the global stage. His strong track record of coaching others to success further solidifies his reputation as an authority in the field.

Now, as a wholesale representative at Onyx Coffee Lab, Lance spends his time experimenting with equipment, diving into coffee literature, and brewing an impressive amount of coffee. His deep knowledge and innovative approach make him a leading voice in the specialty coffee industry.

We turned to YOU to help Lance choose his Main Stage session topic, and the votes are in: Puck Depth is Everything.

Over the years, we have been chasing the “god shot,” changing different variables in order to achieve better espresso. But, what if there is one we have not questioned amidst distribution and grinder debates? By taking a look at something as fundamentally accepted as the puck diameter, which affects depth based on available basket volumes, we are able to unlock another variable with considerable effects on the final product. Along with this comes coffee savings, more efficiency and consistency, and arguably better tasting espresso overall.
